Here’s the story behind how these collagen yogurt pops were created. I’m the type of person who does NOT have patience to make myself a fancy collagen smoothie every day, but if I can make it all at one time and pop it in the freezer… well that’s much easier for me!
So this is how I came up with the idea while partnering with the amazing kosher pareve collagen brand Aleta Collagen. They sent me some of their products to try and I knew I had to come up with something that I would actually be able to be consistent with!
They also sent me this fancy little electric stirrer and boy am I hooked! It makes any milk so foamy and frothy after a minute. Truly satisfying. Here’s the recipe so you can get your collagen in too!
Ingredients:
1 packet of Aleta Collagen dissolved in
1/4 cup milk
12oz of yogurt (flavor of your choice) you may need more based on the size of your popsicle mold
Squeeze of fresh lime
2 T of maple syrup
Chocolate Shell:
1 cup Enjoy Life chocolate chips
1 tsp coconut oil
Directions:
Dissolve the collagen in the milk with the electric stirrer so there won’t be any clumps. Add it to the yogurt. Mix, then add lime and maple syrup and mix everything together. The mixture should be thick. Add the mixture to your non-toxic popsicle molds add the covers and popsicle sticks and then freeze until solid.
To decorate, melt chocolate chips with a teaspoon of coconut oil in the microwave in 30 second increments. Put your chocolate in a tall glass so you can dip the popsicles into it. Dip each popsicle into the chocolate mixture or drizzle over the popsicles. The chocolate will harden very quickly once on the pops.
Once they’re done you can add them to a non toxic freezer bag and make another batch so you have for a while!
