Gluten Free Fluffy Chocolate Chip Cookie Bars
These are so good you will not be able to stop eating them. Sorry not sorry.
Ingredients:
3/4 cup coconut sugar (if you are not used to reduced sugar foods, then you may need 1 cup)
2 T honey or maple syrup
1/4 cup white rice flour (I use this one)
2 cups almond flour
1/2 tsp Himalayan salt
1 tsp baking powder
1 tsp pure vanilla extract
2 eggs
1/4 cup to 1/2 cup filtered water
1/2 cup avocado oil
3/4 bag Enjoy life chocolate chips (linked here)
Directions:
Preheat your oven to 350°F Grease or line a baking dish (9x5 inches) with parchment paper (my favorite baking dishes linked here)
In a mixing bowl, combine the dry ingredients first. Then slowly add the wet ingredients. Add the water in slowly until the mixture is a smooth consistency and not too runny. The chocolate chips add in last.
Pour the mixture into the prepared baking dish.
Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
Remove from the oven and allow it to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Place on a cutting board and cut into bars or squares. Enjoy!
