Gluten Free Nut Butter Protein Bars

These bars are a choc full of protein, contain no refined sugars, gluten or seed oils. Just pure protein!


Ingredients:


1 cup clean nut butter (you can do half peanut and half sunflower seed butter)

1/2 cup coconut sugar mixed with 1/4 cup maple syrup to resemble brown sugar (you can do 3/4 cup sugar plus 1/4 cup maple syrup if you need more sweetness)

3 organic eggs

1/4 cup avocado oil

1 teaspoon vanilla extract

1 teaspoon baking powder

A pinch of sea salt

A couple tablespoons of filtered water the mixture down if it’s too thick.


Instructions:


1. Preheat your oven to 350°F and line a non toxic glass baking pan (linked the one we use here) with unbleached parchment paper.

2. In a bowl, mix together the peanut butter, egg, sugar mixture & vanilla extract, baking powder, and a pinch of salt until well combined.

3. Pour mixture into prepared pan.

4. Bake for 25 minutes or until the edges are golden brown.

5. Allow the bars to cool and then freeze for a half hour. Cut into small bars, drizzle with melted chocolate and top with chopped nuts!

6. Freezes well and defrosts in seconds.
