So you all probably know by now that I am a health nut, but my husband doesn't really care the same much about health as I do, so for his birthday which happens to fall around the same time as Purim, I decided to make him something special.


I do deprive him most of the year with my coconut sugar and almond flour treats, so I figured once a year, I can let loose a little!


So here is how I made these cute little hamentash pockets.


Recipe:


1 can apple pie filling ( or any flavor pie filling) without high fructose corn syrup or food coloring

1 bag of slightly defrosted frozen strawberries

1 egg and a splash of raw honey for brushing


Icing:


1 cup organic confection sugar

1 tablespoon organic vanilla sugar (Grain Brain)

1 tablespoon avocado oil

1 tablespoon boiling water (add more slowly if needed)


Instructions:


Preheat the oven to 350 degrees Fahrenheit.


Place a large square of unbleached parchment paper on your work surface. I use this brand.


Take out one sheet of puff pastry dough and begin to roll it out onto your parchment paper.


Roll it until it's nice and thinned out (but not too thin) and then grab another sheet of parchment paper and do the same thing with the other puff pastry sheet.


Once both sheets are rolled out, start making your filling. Pour the apple pie filling and thawed strawberries into a blender or food processor and pulse until it's the texture of applesauce.


Pour the mixture onto one sheet of puff pastry and spread it out evenly. Place the other sheet of puff pastry directly on top of the filling by picking it up with the parchment paper and plopping it onto the filling.


Take a pizza cutter, here's the one I use for the past 7 years and it still hasn't broken! And start cutting little triangles out of the dough.



Once you've cut all the dough up, use a fork to seal the edges of the triangles so the apple mix doesn't leak out.



Brush the tops with egg and honey and then slide onto a non toxic baking tray, here are the ones I use and love.


Place the trays in the oven for 30 minutes on 350 or until the tops are puffed up and golden brown.


Once it's done, take it out and let it cool. Meanwhile make the icing by mixing all the ingredients together in a glass bowl. I use glass bowls like these daily and it replaces so much plastic usage in my home!


Place the ready icing in a piping bag. I always have a bag of these in my house. You never know when you need to add some flair to a dessert or a chocolate drizzle to a bowl of ice cream.


Drizzle the icing over the cooled triangles and then refrigerate once hardened. They freeze well too!
